Skyr Nutrition Facts: Protein, Sugar and Probiotics

Icelandic Provisions Skyr delivers 11 to 20 grams of protein per serving depending on the line, more than most yogurts, thanks to a straining process that concentrates protein while keeping sugar low. Every line also carries live and active cultures.

Why Is Skyr So High in Protein and Low in Sugar?

Skyr's protein and sugar numbers come directly from how it's made. It takes nearly four cups of milk to make one cup of Traditional Skyr, compared to about three cups for Greek yogurt. That extra straining removes more liquid whey, which concentrates the protein that's left behind and carries less of the milk's natural sugar through into the final product. Nothing is added to boost the protein number; it's a function of the process itself.

Protein per Serving in Traditional, Extra Creamy, Oatmilk and Multiserve Skyr

Protein ranges from 11 to 20 grams per serving across the Icelandic Provisions line. The exact number depends on the product line, since each line has its own recipe and serving size. Here is how each one breaks down.

Traditional Plain has the highest protein at 20 grams and Multiserve has 17 grams, with Plain Oatmilk Skyr close behind at 16. Flavored Traditional skyr has 15 grams, since the fruit and sweetener that create the flavor take up some room in the cup. Extra Creamy, our creamiest line, comes in a smaller 4.4 oz cup with 11 grams per serving. Flavored Oatmilk Skyr has about 12 grams.

Does Icelandic Provisions Skyr Contain Probiotics?

Every Icelandic Provisions dairy skyr contains live and active cultures, including the probiotic Bifidobacterium.

Multiserve is formulated with a measured 3 billion CFU (colony-forming units) of Bifidobacterium lactis BB-12®, a patented, clinically studied probiotic strain, per serving.

Why Protein and Sugar Levels Matter in Your Diet

High protein and low sugar in the same serving means skyr fills you up and keeps you going, without the sugar crash that comes with a lot of flavored yogurt. That's the whole idea behind skyr as a breakfast, a snack, or a post-workout refuel.
