Ingredients
2 Cup
All-purpose flour
2 Teaspoon
Baking powder
1 Teaspoon
Kosher salt
2 Tablespoon
Chives
freshly chopped
2 Tablespoon
Sage
freshly chopped

Finely grounded black pepper

Large egg
6 Tablespoon
Unsalted butter
cold and cubed
1/2 Cup + 2 Tablespoon

Recipe
Step 1
Heat the oven to 425 F°.
Step 2
To a large bowl, add the skyr and egg and whisk until smooth. Set aside.
Step 3
To a medium bowl, add the flour, baking powder, salt, pepper, and herbs to a medium bowl and whisk well to combine.
Step 4
Add the cubed butter to the flour. Using your finger tips, rub the butter into the flour mixture until pea-sized clumps of butter form
Step 5
Add the flour to the skyr and egg mixture and mix together with a wooden spoon or spatula until a shaggy dough forms.
Step 6
Place the dough on a lightly floured surface and press together until a large cohesive piece of dough forms. Press the dough (or roll with a pin) into a rectangle, then fold the two edges so that they overlap at the center. Rotate the dough, and repeat the same folding process. Rotate the dough again, gently roll it out and repeat the folding process one last time.
Step 7
Pat or roll the dough until it’s about 1-inch thick and 6-7 inches long. Use a knife or bench scraper to cut into 6 pieces.
Step 8
Place the biscuits on a baking sheet lined with parchment paper and brush the tops with melted butter. Bake the biscuits, rotating once, for about 16-18 minutes, or until golden brown and cooked through.
Step 9
Brush the biscuits with additional butter, then transfer to a rack to cool slightly before enjoying.
